  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground turmeric
  • 1/2 tsp cayenne pepper (optional)
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup low-sodium chicken broth
  • 1 cup frozen peas
  • 1 cup cauliflower florets
  • 1 cup diced carrots
  • 1/4 cup chopped fresh cilantro

Instructions:

  1. Combine all ingredients, except peas and cilantro, in the slow cooker. Stir well.
  2. Cook on low for 6-8 hours or on high for 4-6 hours, until chicken is cooked through and vegetables are tender.
  3. Stir in peas and cook for an additional 15 minutes.
  4. Serve over rice or with naan bread, garnished with cilished with fresh cilantro.

Hearty Slow Cooker Beef Stew

Ingredients:

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 1/4 cup all-purpose flour
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 3 cups beef broth
  • 1 cup red wine (optional)
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 bay leaves
  • 4 medium carrots, chopped
  • 4 medium potatoes, peeled and chopped
  • 1 cup frozen peas

Instructions:

  1. In a large bowl, toss beef cubes with flour, salt, and pepper.
  2. In a skillet, heat olive oil over medium-high heat. Brown beef on all sides, working in batches if necessary. Transfer browned beef to the slow cooker.
  3. In the same skillet, cook onion and garlic until softened, about 3 minutes. Transfer to the slow cooker.
  4. Add beef broth, wine (if using), tomato paste, Worcestershire sauce, thyme, rosemary, and bay leaves to the slow cooker. Stir to combine.
  5. Add carrots and potatoes, making sure they are submerged in the liquid.
  6. Cook on low for 8-10 hours or on high for 4-6 hours, until beef is tender and vegetables are cooked through.
  7. Remove bay leaves and stir in frozen peas. Cook for an additional 15 minutes.
  8. Serve with crusty bread or over egg noodles.

Vegetarian Slow Cooker Chili

Ingredients:

  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 2 jalapeños, seeded and minced (optional)
  • 2 cans (15 oz each) black beans, drained and rinsed
  • 2 cans (15 oz each) kidney beans, drained and rinsed
  • 1 can (28 oz) crushed tomatoes
  • 1 can (14.5 oz) diced tomatoes
  • 1/4 cup chili powder
  • 2 tsp ground cumin
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper

Instructions:

  1. Combine all ingredients in the slow cooker. Stir well.
  2. Cook on low for 6-8 hours or on high for 3-4 hours, until vegetables are tender and flavors are well combined.
  3. Serve with your choice of toppings, such as shredded cheese, sour cream, chopped green onions, or sliced avocado.
