  5. When ready to use, divide the dough into equal portions and gently shape them into balls. Let them rest, covered, for 30 minutes before rolling out.

Preparing the Ultimate Tomato Sauce
A robust, flavorful tomato sauce is essential to a great homemade pizza. The key is to use high-quality canned tomatoes and let the sauce simmer until it reaches the desired thickness.

  • 1 (28-ounce/800g) can crushed tomatoes
  • 2 tablespoons (30ml) olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon (2g) dried oregano
  • 1 teaspoon (2g) dried basil
  • Salt and pepper, to taste

  1. In a medium saucepan, heat the olive oil over medium heat. Add the garlic and cook for 1 minute, or until fragrant.
  2. Stir in the crushed tomatoes, oregano, basil, salt, and pepper. Reduce the heat to low and let the sauce simmer for 30 minutes, or until it has thickened to your desired consistency. Taste and adjust the seasoning as needed.

  1. Preheat your oven to its highest setting, typically around 500°F (260°C), and place a pizza stone or an upside-down baking sheet in the middle rack to heat up for at least 30 minutes.
  2. On a lightly floured surface, roll out one of the rested dough balls into a thin, even circle, about 12 inches (30 cm) in diameter. If you prefer a thicker crust, adjust the size accordingly.
  3. Transfer the rolled-out dough to a piece of parchment paper or a pizza peel dusted with flour or cornmeal. This will help you easily slide the pizza onto the heated pizza stone or baking sheet.
  4. Spread a thin layer of tomato sauce over the dough, leaving a small border for the crust. Be mindful not to over-sauce, as this can make the pizza soggy.
  5. Add a generous layer of mozzarella cheese, followed by your chosen toppings. Remember, less is more when it comes to toppings; too many can weigh down your pizza and prevent the crust from cooking evenly.
