Directions:

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, and salt. Add the cold butter cubes and use a pastry cutter or your fingers to cut the butter into the flour mixture until it resembles coarse crumbs.
  3. Make a well in the center of the flour mixture and pour in the milk. Stir gently until the dough just comes together.
  4. Turn the dough out onto a lightly floured surface and knead gently a few times to bring it together. Pat the dough into a 1-inch thick circle and use a biscuit cutter or a drinking glass to cut out the biscuits.
  5. Place the biscuits onto the prepared baking sheet and bake for 12-15 minutes, or until golden brown.
  6. While the biscuits are baking, prepare the sausage gravy. In a large skillet over medium heat, cook the ground sausage, breaking it up into small pieces, until browned and cooked through. Remove the sausage from the skillet and set aside, leaving the rendered fat in the skillet.

  • 1 cup shredded Gruyère or Swiss cheese

Directions:

  1. In a large bowl, whisk together the flour and salt. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Add the ice water, 1 tablespoon at a time, and mix gently just until the dough comes together.
  2. Shape the dough into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.
  3. Preheat your oven to 375°F (190°C). Roll out the chilled dough on a lightly floured surface to fit a 9-inch pie dish. Press the dough into the pie dish and trim the excess. Prick the bottom of the crust with a fork, then line with parchment paper and fill with pie weights or dried beans. Bake for 15 minutes, then remove the weights and parchment and bake for an additional 5 minutes.
  4. While the crust is baking, heat the olive oil in a large skillet over medium heat. Add the onion and mushrooms and cook until softened, about 5-7 minutes. Stir in the chopped spinach and cook until wilted. Remove from heat and set aside.
  5. In a large bowl, whisk together the eggs and heavy cream. Season with salt and black pepper. Stir in the cooked vegetables and shredded cheese.
